The world is adrift in blogs. I recognized, however, that there aren’t enough blogs about food. A topic so simple, so topical, so yummy — and yet. No food blogs. Okay, there may be some out there but since I don’t read them, I’m going to imagine they don’t exist. So that mine can be the only one.

    Favorite kale recipes —-> GO!

      Take a bunch of it and make kale chips. I simply washed the leaves, dried thoroughly (with a hair dryer) and laid the large leaves in strips across a baking tin so that they weren’t touching each other. I had kale chips (no oil or salt) within fifteen minutes.

      Also, sauteed kale with dried cranberries — just be sure to use the slightest bit of oil. Or none, just steam. Salt, pepper, cranberries.

      Mostly, I just cut the kale up into teensy strips and put straight into breads like pumpkin or banana bread AND any soup. I use kitchen shears to shred in bulk.

      I’d add that, after cucumbers (for their water content), kale (for its vitamin content) is my go-to source for making JUICE. Do you have a juicer? I love mine (Brevelle juice Fountain). It’s super easy to use and clean. I used it every day when I first got it, now about once a week. Sad. I’m going to go make vegetable juice right now. (Carrots, blueberries since I have them, one beet, celery and KALE)

    Sadly I do not own a juicer – not in the unemployed budget at the moment but eventually I will definitely invest in one. So, do you boil the kale first when you make it with the cranberries? My gigantic bag says boil it for 10 mins and then remove water and saute however you like. I was going to try doing that and then sautee with EVOO (or maybe a dab of sesame oil?) and fresh ginger…but I will also be trying your cranberry recipe as that sounds like the perfect blend of slightly bitter and sweet!
